We're off to a great start with our FFwD recipes for July!  These pickles are delicious, light, and fresh, everything you want in a summer side dish.

These pickles are super easy to make.  A little ginger, a bit of vinegar and a pinch of red pepper flakes.  Leave the in the fridge for a couple of hours and voila, your cucumbers are pickles!  I used a hot house cuke and I definitely recommend it.  The milder flavor lets the ginger shine!

A friend and I took a road trip to Memphis to spend a few days with another friend.  I LOVE spending time with my favorite girls!   I made these for our 4th of July cook out.  Everyone enjoyed them and I'm already wanting another cucumber so I can make them again.


My friend decided Memphis has the best margaritas...or at least the best margaritas are at the Jones's house...or wherever Mr. Jones and his margarita shaker might be!

We went to the Peabody to see the ducks, walked on Beale Street and spent time floating in the pool.  The most fun of all, though, was spending time with my friends.  A special few days well worth the 8 hour drive:)

  5. Your Ginger-Pickled Cucumbers (with the peel on)look very fresh and they were a perfect dish for the month of July, I agree. It is so nice that you got to spend time with your girlfriends in Memphis. I have never visited Memphis but whenever I read something about it, it sounds like an incredibly interesting place to visit.

  7. Guyla, How wonderful to spend a few days with your girlfriends! I’m sure a fun time was had by all! Those margaritas look very good…as does your very lovely cucumber salad! I love that you left the skin on…adds a nice touch of color! Have a great weekend!

  11. Very refreshing summer recipe, glad you liked it. Tricia and her family loved it as well as hubby. Will probably repeat this one
    a lot this summer. A few years back, Tricia's family, hubby and I took a cross country trip and stopped in Memphis. We
    stopped at the Peabody Hotel to see the ducks and thought they were really something strutting through the lobby. We also
    had a great meal at the Germantown Commissary restaurant. Have a great weekend.

  12. I love that top photo. It makes the cucumbers look all mysterious! I really enjoyed this recipe, and it made enough for my husband and to share them at a couple of meals! I didn't try these on the kids for some reason.

  13. Your pickles also shine with the skin on. Hothouse is milder huh? It's interesting that you noticed the ginger really comes thru. I'm not sure that the ginger is mine is predominant. I went with an extra pinch of red pepper flakes.
