FFwD - Broth Braised Potatoes

What a week it has been!  Where to begin...My good friend, Marsha, was in Orlando helping her daughter and grand-daughter adjust to daughter going back to work and grand-daughter going to daycare.    Not fun, in fact very traumatic! Grammy to the rescue; that's what grandmas are for:)  So I flew to Orlando, spent a couple of days with my friend and her daughter and family then drove with Marsha to her home in Memphis.  Other than driving through Alabama in the middle of a tornado, leaving a computer and ipad in the hotel and driving all over Dothan, AL looking for breakfast (seriously, someone needs to open a cafe in Dothan) it was a great trip loaded with girl talk.  I don't know what I'd do without this amazing woman in my life...I don't even want to think about it.


Then there was time with my husband's family who also live in Memphis.  A good time was had by all but 'there's no place like home' and we're happy to be back in Oklahoma!

Oh yeah, I got a cold.

I was tempted to blow off the potatoes this week but I didn't.  I didn't get a picture but I'm glad I made them!  They are super easy and delicious and as much as I love potatoes its often the stuff I put on or in the potatoes that I love the most.  Broth braised potatoes have very little fat and lots of flavor!

And now, since I have no picture of potatoes, here's a picture of my grandson:)  It didn't transfer well but I think his adorableness is obvious!

  3. So nice you could be with your friend. Love seeing your grandkids. You are right, they are adorable! Sounds like a nice trip...hope you retrieved your electronics. And I agree...little fat and lots of flavor. Makes Hubby happy.

  5. Both your grandson and Marsha's granddaughter are just gorgeous - it's a wonderful time in their lives. I agree that the potatoes were super quick, and a cut above boiling them in salted water. Have a great weekend.

  7. Aw, lovely little tykes! I'm also trying to get rid of a cold these days. Through my stuffy nose I could smell that wonderful broth. Maybe that's why I didn't think the potatoes were as tasty...

  9. Sounds like an interesting trip. It's nice that you enjoyed time with such a good friend, even with tornados. Glad you were able to
    make the dish, and I hope you are feeling better. Tricia and I did not exactly care for the recipe, but we tried it and that what counts.
    I guess I am too frugal, and that's is why the potatoes ended up in the frittata.

    Glad you enjoyed the potatoes...I think my mistake was not to cut mine...the flavor of the yummy broth did not infuse through the skin, so they were just so-so.

  21. I think the baby pictures are great replacement for the potato photos. Certainly much cuter! Get well soon and I'm glad you find a new way to enjoy potatoes without much added fat. ;)

  22. I love the baby photos! They are both so cute, definitely more fun than pictures of boiled potatoes :-) I'm glad you enjoyed the potatoes. It was nice to have something healthy thrown in. As much as I'm loving cooking through the book, I don't think it's great for my waist-line.

  23. I also loved how these potatoes wer so flavorful with vey little fat. I'm so glad you made them, even though you didn't get a picture (sometimes it can be hard to get the pictures taken before getting dinner on the table!).

  24. Oh my gosh - he is fabulous !!! That shot could literally be a greeting card - you HAVE to smile when you see it. Lucky lucky you. And kudos for knocking out that potatoes (thank goodness they were straight forward)after the week you had. So nice that you have such a close family and friends and that you all appreciate each other. That's what it's all about..but you know that!
