FFwD - Corn Pancakes

Corn pancakes
We have a special occasion recipe in our family fondly called Funeral Corn.  Its the dish my aunt always takes to the bereaved for a funeral supper and over the years we adopted funeral corn as the name instead of corn casserole like she calls it.  

When Gary tasted these corn pancakes he said, "MmmHmmm!  Tastes like funeral corn!".  I didn't expect to like these, thought they'd be bland.  Instead they're delicate.

I added the kernels from an ear of fresh corn for the texture and freshness.  We topped the pancakes with a dollop of sour cream and a salsa made of avocado, red onion, jalapeno, cilantro and lime.  We loved these and will have them again and again. 


I'm kind of obsessed with ice cream lately so for dessert I made strawberry frozen yogurt from 
David Lebovitz.  Perfect ending!

  2. I love your story about funeral corn. Your pancakes look good with the avocado salsa. I used sour cream on mine too and thought it worked
    perfectly.
    This was such an easy recipe, I will definitely being using it again and again. Have a great weekend.

  3. Delicious looking pancakes and great little story about the name of your corn pancakes. I love the way that the Doristas "dressed" the pancakes with different and interesting toppings, avocado salsa sounds fresh and summery. Ah, the strawberry frozen yogurt, of course, it looks delicious and healthy too! With all the wonderful frozen treats that you have been making (and posting), you have me convinced that I should order David Lebovitz`s book.

  6. Guyla, Your corn pancakes looks wonderfully delicious!! Love how you topped them! We really loved these, too! Every family has a recipe or two that becomes a tradition for different reasons…Funeral corn says it all!!
    Hope you’re feeling better…for me this is chronic…an old whiplash injury! Every once in awhile I do something stupid that will inflame it! Have a great weekend!

  14. I'm sure I've mentioned it before but I LOVE that book! So many delicious ice cream recipes and I haven't even touched on the frozen yogurt recipes yet. I'll definitely have to give them a try.

  16. Guyla, I am glad you liked the corn pancakes (me, too). Your garnish and topping sounds delicious. I liked that you used a fresh kernel of corn also. I think I processed mine too much and felt it needed more texture. After making David's olive oil ice cream and then his mint chocolate ice cream, I ordered "The Perfect Scoop." I, too, am walking the ice cream/sorbet/yogurt path this Summer. Happy 4th of July.
