FFwD - Compote de Pommes + Hurry-Up-And-Wait Roast Chicken

I've gotten behind on French Friday cooking and posting. Hopefully, I will catch up in the next couple of weeks. I lost my friend almost two weeks ago and I'm struggling to move on with my life. I will get there...I just need a little more time.


Compote de Pommes

This weeks Compote de Pommes (French Applesauce) was simple and delicious. I served it as dessert with whipped cream. I've never served applesauce with whipped cream and it was a revelation! Gary and I each had two servings and on the second one I layered the whipped cream with the applesauce and it was even better! I used an assortment of apples left in the fridge and it came out perfect!

Hurry-Up-And-Wait Roast Chicken

Roast chicken was just what we needed for an easy comfort meal. I liked the technique of turning the chicken (although I admit it wasn't easy and involved props to hold it in place) to ensure even cooking. I through a few potatoes and carrots into the pan and we had an easy and delicious dinner.

  2. It will just take time to get over the loss of your friend. Take each day as it comes. The applesauce was delicious. I loved the vanilla.

  5. Guyla, My heart is so sad for you. Hopefully time will take away some of the pain…and the memories of your friendship will be there to comfort you.
    Your applesauce looks so yummy with the whipped cream. I ate mine plain and truly enjoyed the fresh apple taste with a hint of vanilla. Your chicken looks perfect! Have a wonderful weekend, my friend! I am sending thoughts and prayers your way!

  11. Guyla, I too am so sorry for your loss. Sometimes life indeed does throw us a curve and we need time to adjust." Recalculating" as that GPS always says. (for the record, I hate the GPS...but I do love the phrase :) Take the time you need to get back into routines and I wish you much comfort from these daily ....or weekly....routines. I am also so happy that our recent recipes did involve non complicated, and comforting, foods. Hugs to you.

    Your roast chicken and your apple compote (with that added touch of whipped cream) both look quite delicious - although I was a day late posting, we really enjoyed the apple compote as well!

  14. I haven't posted my applesauce yet but I did the Greek Yogurt thing - it was delicious. Whipped cream, even better. I make applesauce often (crockpot) so love your look. And your roast chicken, looks good and delicious. I didn't realize we were so close to Oklahoma City until I saw the turnoff on our drive home. We were on the fast track, however, so it couldn't have happened. It was nice of you to invite me to stop and say, "hello". I am so sorry for your loss, Guyla. I saw that it happened when you posted on Facebook. Nothing to say except you're in my heart as you mourn this loss. It hurts and it always will. Just keep getting up each morning, put a smile on your face and love those around you even more. That's what I do every day. It works. (Not right now, however, I'm crying for you.)

  17. I'm so sorry for your loss. I hope you found the applesauce and whipped cream at least somewhat comforting. I've never tried them together, but whipped cream is pretty much my favorite food, so I'm definitely intrigued.
