FFwD - Honey Lime Beet Salad

I love beets!  I didn't know that I love beets until Dorie showed me how good they are when we made the Icy Beet and Onion Salad last year.  Until then all I'd had was the canned stuff, and they're not very good.  Nothing like a fresh beet cooked at home.  I guess you could say that about most foods though.

The Pioneer Woman's grilled flank steak accompanied the salad.  The marinade was a bit too salty and next time I'll use low sodium soy sauce.  All in all it was a delicious meal topped off with Toasted Coconut Ice Cream from David Lebovitz's The Perfect Scoop.  Wonderful!

  3. We love "The Perfect Scoop" and just made the Chocolate Raspberry Ice Cream - it was like eating Raspberry Truffles! Since I adore coconut, I can't believe we haven't made this one yet - it will have to be next on the list!

    We really enjoyed the Beet Salad, too.

  4. Me too , I love beets ! I have tried Dorie's Icy Beet & Onion Salad and it was good and this is even more tasty and delicious. It goes well with my pan seared salmon :) Have a great weekend :)

  5. it seems that the canned stuff that comes out in rippled coins were quite popular for some time!! almost everyone can remember eating them!

  6. I'm amazed to learn that there are cooked beets to be had. I never knew that. I guess instead of walking around the supermarket with my
    list in hand I should look to see what else is available. The only time I bought beets was at the deli counter, and they were pickled.
    That is a fabulous looking meal you put together, everything looks great. I will try the beets again sometime, but I will leave the dill
    out of the recipe. I just did not care for it. Happy weekend.

  7. Sorry, but you can't distract me with homemade ice cream at the end and expect me to remember what you were posting about. That ice cream looks delicious, I've eyed it on more than one occasion and now I think that might have to be the next ice cream I make. I just did David's Maple Ice Cream with Wet Walnuts last week and it was really good.

  8. I think the curly greens you used with the beet salad look so pretty. I had to smile at your canned beets comment because it was exactly what I used for the sake of convenience. But that toasted coconut ice-cream!! I want some right now!

  11. Delicious looking dinner - the salad is probably very good with steak. I served it as an appetizer with baby swiss chard, we liked the salad too, nice change from the usual beet salad recipe I use. And your coconut ice cream looks utterly delicious, I think vanilla and coconut are my favorite flavors!

  16. Homemade beets are awesome! I roasted mine and loved this salad too. I will definitely have to try and find the toasted coconut ice cream, it looks amazing!

  17. I love beets, Guyla, but I would have started this meal at the end. David's Toasted Coconut Ice Cream sounds devine. I made his Mint Chocolate Ice Cream with my granddaughters last week and it was unbelievably tasty. The infusion of the mint leaves with the custard was unique. Just ordered The Perfect Scoop yesterday. Back to the beets. Delicious and I liked Dorie's other recipe also. Nice meal.

  18. I liked the beets too, but I'm most excited by the toasted coconut ice cream. I can't believe I've had David's book for 3 years now and still haven't made it. It's moving to the top of my list!
