FFwD - Coconut Friands

Don't you hate it when life gets in the way of cooking?  We've been through a crazy time but things are getting back to what we call normal.  A psychiatrist  might call it the dysfunction we're familiar with.....but isn't that what we all call normal?  One thing I know is the old saying "When you have your health you have everything." is so very true and I promise myself to take good care of myself!

I missed the last two recipes but I have now made the Navarin Printanier and the friands.  The asparagus and bacon are on hand and I just need some sardines and I'll catch up this weekend with FFwD but I'm also behind on TwD!   I have to admit you guys aren't very encouraging with most of your sardine rillettes posts!  But my husband likes canned meat/fish products so I'm hopeful!  (I think our daughter-in-law likes my husband in most areas but has confessed to being deeply disturbed by his love of canned meat/fish.)
Coconut Friands

The coconut friands are super easy to mix up.  This is the kind of treat you can whip up anytime you want/need a delicious treat or dessert.  Since I could find only one of my mini muffin pans I baked in batches and added lemon zest to the second batch.  The lemony tang is a great addition but they are fine on their own.  Before baking I sprinkled the tops with a bit of raw sugar for a little sheen and added sweetness.  I think they are just about perfect!

  3. Yes I do hate it when life gets in the way of kitchen time...especially where there are so many good things to make...like these friands. Yours look so moist and delish...and I agree, these are so simple that we can make them anytime we need a sugary treat...like about everyday.

  5. I don't know if I'd even bother with the sardines. I hope your husband really likes canned fish!! I think my friands had a different texture because I didn't have quite the full amount of coconut.

  8. Yay! You're back! I missed you out here in FFwD land. Glad to hear things are heading in the right direction. Your friands look lovely. I kept waiting and waiting for a hint of brown on top, but I'm afraid I sacrificed a little moistness. Don't you love the suggestions to add fruit? Especially a couple fresh cranberries on top -- mmmm. Catch you next week. :)

  12. Glad to see you with us this week, Guyla. I might be one of the few, but I'll offer encouraging words on the sardine rillettes. I really enjoyed them. The coconut friands, I didn't even try, as I don't likes shredded coconut. What can be done with that? I hope things have smoothed out for you in the life department. I look forward to see how your Navarin came out.

  16. Glad you are back, I've been missing your posts and was wondering if everything was okay. Hope life returns to a normal disfunctionality for you.....I've not done the lamb stew and not sure I'm going to get to it - we are also functioning disfunctionally and hoping to get back to normalcy sometime before summer! How is your photography going?
