FFwD - Tomatoes and Salmon en Papillote

This is a good and simple recipe and I ruined it!  First I was running behind so when the closest supermarket didn't have fresh salmon I bought frozen.    I've successfully used frozen fish in the past but this was not one of those times.  The fish was bland, dry and over cooked.  I'm still trying to figure out how salmon (package said fresh caught so it should have been flavorful), basil, rosemary, lemon, tomatoes and onions could be bland!  And I think 8 minutes would have been long enough.  Do you see those potatoes, though?  They were to die for.  I had a couple of new potatoes left over from my warm weather vegetable pot au feu (still playing catch-up) so I boiled them then sauteed them in olive oil and butter.  To Die For!  Stop by the  French Friday site to see what everyone else is doing.

  1. Hi Lola...I agree this is simple but it is delicious. And your salmon looks great ! The link is not up yet so I could not get to see how the others are doing with this dish :) For me it was the most tasty salmon en papillote :)

  3. I notice that frozen salmon usually demands more flavourful preparation such as grilling or pan searing. En papillote is too delicate for any imperfection to reveal itself. Alas the recipe came out bland for your dish. The potatoes, on the other hand, look delicious!

  5. I enjoyed this dish and thought the fish came out moist and flavorful! So sorry yours didn't come out so good! I guess sometimes you can't substitute frozen…I would have thought it wouldn't make a difference! Your dinner looks really delicious!

  6. Well if looks count for anything this would be great. Sorry it was bland. I was somewhat expecting bland and was surprised at how great it was.

  8. Interesting. Usually frozen fish works well. Here in AZ we get lots of frozen or "previously frozen" and seems to be ok...maybe it was a bad fish. I think we will all blame the fish this time.

  9. I got frozen fish from Sams Club & mine turned out excellent. Maybe try a different brand of frozen fish??

  10. Oh Lola! I guess sometimes frozen fish can be a bit of a gamble. Your pictures look wonderful though, and those potatoes look perfectly crisp outside.

  11. Oh, sad. I know how it is to talk yourself into something, and then be really disappointed in the result. Would you try the frozen fish another time and just change the timing, or is it the last frozen fish for you?
