FFwD - Savory Cheese and Chive Bread

This could be called clean out the cheese bin and throw in whatever herbs you need to use up bread because that's what I did. Dorie gives several options for additions which gave me the courage to use up what needed to be used. For cheese it was cheddar and the unknown hard white cheese I've been working on for several weeks. For nuts I had almonds. For herbs the bit of leftover thyme and the new chives fresh from my garden...don't you love spring?! It was a warm, sunny day with little wind (always a consideration in Oklahoma) so we sat outside with one of our favorite beers, Birra Morreti, and our cheese and chive bread and felt quite sophisticated.  Also took some to the neighbors and they reported back that it was delicious and could they have the recipe please. I call that success.  Be sure to check out the experiences of everyone in the French Friday Group!

  1. Thank you for confirming my suspicion that this would pair wonderfully with a beer!

  2. I love your description of this bread! It really did seem like you can throw whatever you have on hand in the dough. Great post, and I love the beer in the background!

  3. Spring? What's that???
This was absolutely a clean out the cheese bin kind of deal (I think I ended up with three to four odd ball cheese ends in the mix). And that beer sounds REALLY good right about now (but it's only noon).

  4. Please add this recipe to the L-O-N-G list of Missy requests! Sadly, no beer for me....

  5. I love your clean out your cheese bin description! I wish I had done that instead of just using Emmantal to boost the flavor.

    Looks yummy!

  6. We don't seem to have a problem of cheese staying around the house, but I'll keep this in mind in case we ever do!

  7. Beautiful bread! I also used up what I had in the house. Nice that your having Spring where you live…here in NJ it is so cold and we still have so much snow on the ground. I think I may never see plants peeping through!

  8. Almonds! Interesting. I'm rather intrigued by this. This recipe is a great way to clean out the cheese drawer!

  9. I agree. So I made a 2nd loaf using up more of my leftover cheese...and I think that one was even better.

I'm wondering if it will by mid June.... if we're lucky. golf could be later than ever this year... 14. Sounds so perfect! It is a great bread to throw in everything leftover in the fridge. The thyme must have given it a wonderful fragrance and taste. And what can be better than fresh herbs from the garden? Your loaf looks beautiful.

  19. Thanks for visiting my blog and leaving such a nice comment. I agree that this recipe is a versatile one. Next time I will try different herbs and cheeses and maybe a nice glass of beer instead of the chilled wine;-)
Your bread looks delicious and I think filling it up with different herbs and cheeses is the best idea.

  21. Even though we love cheese, and trying new flavors, somehow we end up with "bits" in the fridge. One of the first things I loved about this recipe was the chance to find this stuff and the option of other leftover....a yummy new home. This is worth making for the aroma alone :) Nana loved hers too and I think hers with the yellow cheddar was much prettier. I am very interested to try your Birra Morreti- what a fun piece of info to share. My hubby sends thanks in advance :)

  24. Thank you for leaving a comment on my blog. It is hard coming up to the first anniversary for you, but it DOES get easier, though the sadness never really leaves. You feel cheated hearing friends talk about their own mothers and when they start complaining about them, you want to shake them until their teeth rattle and tell them how lucky they are still having their mother with them.

  25. I love reading about you guys looking forward to spring as we eagerly await the cooler weather after another long, hot summer! Our temps are dropping to high 20's (degrees Celsius that is) so it's nicer to be outside as well!
I love your photo, it looks like something out of a magazine!

  26. Your photo is great - love it with the beer. I didn't really like the bread - my chives were tasteless, I guess.

  27. Ha! This was a great "clean out the cheese bin" bread. I also love the image if sitting outside in the warm sun with a beer and this bread.

  31. I'm all too familiar with those mysterious cheeses, um, aging? in my cheese drawer. Good work putting them to use!

  32. I wish I had used thyme instead of rosemary! I even have a very prolific thyme plant! Next time, for sure. And, I love that about Dorie's recipes: she gives you courage to go with your flavor instincts or to do whatever is practical. I bet she'd be a great teacher.

  36. Delicious looking bread! Pairing it with the beer sounds great! I love Spring, too! My chives are the first thing I see popping out of the ground. The lemon balm is next!

  37. Mmm, I bet almonds would be great in this! It is nice to get rid of all the mystery cheeses, that's for sure.
