FFwD - Creamy Cauliflower Soups sans Cream

How is it possible for a few vegetables and chicken stock to produce something so creamy?  So velvety?  So smooth?  So delicious?
Creamy Cauliflower Soup

We love cauliflower.  We love it in a gratin, boiled, mashed, roasted or fried.  I can't believe it never occurred to me to blend it into a soup.  That's why I need French Fridays.  That's why I'm thankful for Dorie's cookbook Around My French Table.

I topped my soup with bacon, thanks to a heads up from Cher and some fried thyme leaves.  I'd never fried thyme before but it is actually quite good with a bit of salt.  Just be sure its really dry before dropping the leaves into hot oil!

I hope everyone is enjoying the Christmas season.  My out of country Christmas cards went out yesterday.  The rest will go today.  Thank you to everyone participating in the card exchange.  I LOVE Christmas cards:)

  3. Oh, man, this soup may have not been a winner with me, but yours looks so delicious! I'd be willing to give this another try if I thought it would end up lookins to elegant and creamy. Lovely job!

  8. Guyla, I like cauliflower in every way, shape and form also. My only complaint about this soup was that it wasn't "cauliflowery" enough. Although I've often read recipes where "frying herbs" was happening, I have never done it myself. Two of you fried - thyme as well as parsley, for a topping. The crunch of that sounds good to me. I know I can. I know I can. I also like receiving Christmas cards. It's fun but many of my friends have stopped doing it so I have glad to have added this new bunch of friends who are keeping my mail box hoppin' with holiday fare. The rest of mine get mailed this week-end.

  13. I feel the same...I have loved the extra Christmas cards I received! Such fun.

    Yeah, no elusive ingredients...love that. And I just checked out next week's chicken...I'll I need to pick up is mushrooms. We picked some good ones! Have a great weekend...your soup looks yummy with the bacon garnish! I think we've come a long way since our first FFwD photos :)

  20. I've got all my cards out now, too. Canada Post assures me you'll all get them before Christmas! I've so enjoyed the ones I've received so far.

    I like the idea of fried thyme, I'm going to have to look it up. Your soup looks just perfect.
