Less than two weeks before Christmas. I imagine all the French Friday cooks are rushing around like crazy trying to make a happy holiday for their families. So much to do so little time. All of the wonderful Christmas cards are helping to keep my spirits bright:)

Luckily for us this week's recipe was easy and delicious! When my husband heard what the dish would be he said "Noodles!". "I want noodles!" Not one to stand between anyone and a pasta product I cooked noodles and I have to say it was a great call.
I followed Dorie's serving suggestion and made Lemon-Steamed Spinach. Delicious pairing!
The next time I make this (and there will be many next times) I will either chunk the chicken or pound it (gently of course) into thinner pieces to help it cook faster.
I'm off to visit my grandson for a few days. I know I'll be there for Christmas in just over a week but I need a visit NOW:) Love that sweet baby!
I know what you mean about grandsons! Can't get enough of them!!! Your food is so beautiful. We also enjoyed this dish...noodles are a great idea...we're still using up bags and bags of potatoes thanks to Hubby's grocery shopping...so mashed potatoes were good too. Merry Christmas!

ReplyDeleteAnd yes, I for one am rushing around going a bit crazy. I have no idea if I'm going to be able to cook along at the end of December or early January, but I'll try because I always miss this group when I don't.
I made mashed potatoes because the last FF dish was over noodles and I wanted to be different, but I think in retrospect it would have been a little lighter to have gone with noodles. Yours looks fabulous.

ReplyDeleteIt looks great served with the noodles - this sauce just begged to have something soak it up. Good idea! I also like your tip of slicing and pounding the chicken thinner. I always have a hard time getting chicken breasts cooked evenly when they are left whole.

ReplyDeleteEgg noodles - last night my daughter was in a restaurant and changed her whole order because she couldn't have it over egg noodles (She went from steak tips to a salad...). Never underestimate the pasta!

ReplyDeleteI am glad to know, Guyla, that you are such a "typical" grandmother. These grandchildren grow up so quickly and you need to get as much "spoiling" time in as possible. When Emma (11) was born, Michael had I made these impossibly long road trips (14 hours to Bishop from Aspen) every single month to spend a week-end and to see her. When Clara (8) was born, we never missed a beat. We knew those little girls and they knew us. They also knew their grandpa would slip them a Bismark jelly donut or two every visit (Mommy was horrified by that). In hindsight, I am glad for every wonderful moment my husband had with those little girls and although they won't remember much about Michael, they will remember the jelly donuts. I loved the chicken dish also and noodles are a delicious base for all that sauce.
ReplyDeleteEnjoy that grandbaby and hold him tight…before you know it he will be going to his first school dance…like my eleven year old grandson did this past week. Where do the years go?
