This is good...I mean seriously good...and easy! Its like chicken pot roast. You just throw the veg into the pot then put in the salt and peppered chicken, pour brandy all around it, cover tightly and voila, about an hour later you have a pot of deliciousness!
It doesn't really need anything to go with it but I'm obsessed with roasting vegetables and had some brussel sprouts in need of cooking so I coated them in olive oil, sprinkled with salt and roasted at 400° for about 20 minutes. Sweet and salty and crispy. I tell you if you haven't tried roasting vegetables you're missing out on a flavor bonanza!
A little white wine is good too. I'm loving Chateau Ste. Michelle Gewurztraminer. Crisp and light and good with so many different foods.
I think this is my husband's favorite French Friday recipe to date. He just couldn't stop talking about it...and it was perfect for lunch the next day. He said its like chicken pot pie without the pie. He's right.

I love the Chateau St. Michell Gewurztraminer. Their Riesling is delicious too. This recipe is definitely a keeper for me too.

PS, what setting do you use to blur your background - I'm still working on that rather unsuccessfully....
ReplyDeleteI have brussel sprouts sitting in my fridge from a recipe that I decided I didn't feel like making. A simple roast job may be just the thing! Glad this was a hit. Gewurztraminer is deeeelicious. It seems closer to a German Riesling than the sweet, syrupy stuff we get here in the states.

ReplyDeleteWow- "like chicken pot pie without the crust"....now that it is a pretty darn good endorsement :) Of course the crust is my favorite part so I guess I was not destined to love this one. So nice to hear how much it was enjoyed in your house - while it is always fun to try something new, it is even more gratifying to know we pleased the ones we love.

ReplyDeleteLola, I love roasted veggies...I sometimes sprinkle a little balsamic vinegar over my roasted brussels sprouts just before I take them out of the oven...yum! Your chicken looks so delicious. I agree this was one of the best dishes we've done. Have a nice weekend!

ReplyDeleteYour husband really came up with the perfect description of this dish, didn't he? And why did it take us all so many years to discover how delicious roasted vegetables are? I would have eaten so many more as a kid had my mother roasted them instead of boiling them to death.
