FFwD - Warm Scallop Salad with Corn, Nectarines and Basil

My birthday at the beach with the entire family!  Does it get any better than this?  Surely not and yet it was and is a very difficult thing for me to adjust to being 60.  I'm not sure yet why other than the obvious that I'm getting old.  I don't really mind being older, though; in many ways it beats being young.  Partly its disappointment in myself.  I haven't turned out the way I would have liked.  Guess that's one good thing about 60, I'm not too old too change......I hope!

I didn't really get the 'salad' aspect of this recipe so I decided to turn it into a salad.  Instead of plating the components side by side I mixed them together with the scallops on top.  We loved the lime dressing with the corn and nectarines.  The tomatoes were lost in the shuffle.

This recipe is a keeper except for the fact the scallops were $24.99 a pound!  I have to admit they were absolutely delicious and worth every penny!  Fresh and sweet!  And I live in Oklahoma!  Thank you Whole Foods:)

The downside?  The next day my house still smells like scallops!  Not so nice today.

  5. Happy Birthday nice to be able to celebrate it at the beach. I mixed everything together too. It tasted just fine. Scallops are definitely cheaper on the East Coast. I buy them frozen because they are frozen when they are caught anyway. They tend to cost less this way too.

  7. Hi! Beautiful photo of your birthday at the beach, and your scallop salad. I'm kinda happy to hear that the tomatoes "got lost in the shuffle" because that is one thing that is hard to find around here (Montana)...tomatoes...almost can bring me to tears, but -- ONWARD! There are more important things in life that easy access to beautiful tomatoes. :)

If I could raise a beautiful family like yours, I'd say my life has turned out better than I'd expected, so I hope you won't have any more regrets and just enjoy life from now on :). Your salad looks stunning, worth every cent you paid for the scallops. Although if you're trying to save a bit, eggplant scallops aren't too bad either...haha! Happy birthday <3

  16. I look at the photo of your family at the beach and I'm jealous. I hope to have such a beautiful family when I'm 60. Best wishes for a great 60th year! I agree this salad had too many components (I probably would have eliminated the nectarines instead of the tomatoes), but the flavors were great.

  17. Great job on the dish - looks beautiful.

    Recently, my husband decided to eat pescatarian and wow - how expensive is that choice! I spent $10 on 4 scallops and $15 on a lb of shrimp to feed 4. Ouch! Most nites that means no fish protein - have to find it in other ways. But this dish was worth it wasn't it? What a lovely combo of flavors - every bite was a treat. Happy Birthday - I am heading into #50 and trying not to think about it too much. It beats the alternative, right?

  18. Happy 60th birthday. 60 is not old, so do not think that way. There are too many things to do ahead of you, and with such a lovely
    family you have a lot to enjoy. I just turned 81, and Tricia and I are busy planning our trip to the Loire Valley and Normandy for
    this October. Your salad looks great and I love all your photos.

  19. Happy, Happy Birthday, Guyla! Don’t you know that 60 is the new 40…that’s what I choose to believe! Nana’s right…it’s not old! Age is a state of mind! I could keep going on…but just remember that it sure as hell beats the alternative! I’ve got a couple years on you, and turning 60 was the only birthday that I really minded, but life is wonderful…enjoy everyday that’s given to you!!
