FFwD - Top Secret Chocolate Mousse

Some things cause me to pause.  The first leaves falling in an autumn wind.  My grandson making eye contact with me.  Eating raw eggs.  Call me an impaired gourmand if you choose but that's who I am.
Top Secret Chocolate Mousse
I thought about whether to skip this recipe but I wanted to make it.  Thanks to a new Whole Foods I was able to find pasteurized eggs.  End of dilemma right?  Nope.  Pasteurized egg whites will not whip up into a light and airy meringue!  Will not!  The picture below shows egg whites that look more like...I'm not sure what.

So I switched to regular egg whites and voila...after 1 minute look what I had!

We loved it!  An easy and elegant dessert!  Its great eaten immediately but the next day its kind of like a chocolate truffle.  Nothing wrong with that!  Oh yeah...I would like to report no illness as a result of eating raw eggs.  I didn't expect there would be but we all have our phobias

There has been much cussing and swearing as I write this!  See how I can't get out of the photo box!  I give up!  ANNOYING!

  1. Oh, man, I wish my mousse came out looking half as good as yours! Beautiful!
    Oh, and I've gotten stuck in the photo box before. The only solution I found was deleting the photo, writing the rest of my post, then going back and inserting the photo again. A pain in the neck, but it worked!

  4. after all the anxiety about the dish, I'm certainly glad you used unpasteurized eggs and it all turned out good for you! :) Hopefully you wont be as anxious about it from now on and can really enjoy your fabulous mousse!

  7. I've eaten so much cookie dough in my day that I think I must be immune to salmonella...my hubby looks at me like I'm crazed, though. I've had that same issue with pasteurized eggs...they seem to whip up eventually, but a lot more work! Glad you survived the raw eggs...and could enjoy this delicious dessert!

  8. I am also a bit iffy when it comes to raw eggs! I'm glad that you enjoyed the mousse and didn't get sick because of them ;) I don't know what pasteurised eggs are but I have a rule, I only trust raw eggs that come out of chickens I know :) :)

  9. I also had to pause with the idea of raw egg, but I did buy organic. I’m with Lizzy…I’m always sampling cookie and cake batters! I felt pretty confidant it would be ok! This mousse was wonderful and yours looks fabulous! Have a wonderful weekend, Guyla!

  10. I should probably be more concerned about raw eggs than I am, but then I can't imagine making chocolate chip cookies without eating the dough. I also like my eggs on the runny side in general so I may be a lost cause.

  11. Very lovely presentation - I love the way your Mousse au Chocolat looks like in the pretty serving dish with some whipped cream and a raspberry on top (and a dusting of cocoa powder)!

  15. I have never used pasteurized eggs, and I find it so interesting to see difference in the two bowls of egg white. As I was adding the yolks to the chocolate I also thought about them being raw, then I thought Dorie certainly would not make a recipe if it were not safe. It all
    turned out well and we enjoyed it. Have a great weekend.

  16. I didn't realize that pasteurized eggs would whip up so differently. I get my eggs from a neighbor down the street, so the eggs are always just days old (or less), so I don't worry about eating them raw. In any case, your mousse looks delicious, and I'm glad you enjoyed it.

  18. Guyla, I know I am not supposed to laugh at, what was, a serious Post about raw eggs that whip up nicely and those blasted but safer pasteurized eggs that don't but your Post was very funny. Your mousse looks lovely. Every time I write a Post, there is all kinds of naughty words coming out of my mouth. Posting is the most challenging part of every recipe!
